5 minutes - 1 pan - 4 easy steps

Instructions:
Before you start, place a non-stick frying pan on a medium-high heat with 500ml of boiling kettle water and a pinch of sea salt.

1. Simmer

Simmer the gnocchi for 3 minutes, or until they rise to the surface and are tender, then drain away the excess water and reduce the heat to low.

2. Stir

Stir in the sauce and cook for 1 minute, or until the sauce is piping hot.

3. Add

Add a couple of splashes of water to loosen the sauce to the perfect consistency, then add the mozzarella, and stir really well until it melts into the sauce and goes lovely and oozy.

4. Serve

Serve the gnocchi and sprinkle over the grated cheese, finishing with a few basil leaves, if you have them, a drizzle of extra virgin olive oil and a pinch of black pepper, if you like.

Serving Suggestion

Give it a veg boost! Add frozen peas, sliced Tenderstem broccoli or halved green beans to the boiling water to cook with the gnocchi. Or, serve the gnocchi with a crisp lemon-dressed mixed salad.
